Just do a chargeback. It's easier than having to endure all that.

You can do chargeback on a debit card but if easyjet haven't actually cancelled your flights then that's not relevant I don't think, because chargeback is for where goods or services havent been provided. If your only option is a voucher then you'll have to call/do the form.

I had to call easyjet last month and went through the same issue. I found first thing on a morning worked best.
 
So my wee gran has now been taken off her medication, and is on morphine to aid discomfort. I was supposed to fly tomorrow but obviously not going to now. The cancellation policy from Easy Jet is saying £32, but given the flight wasn't that much more i'm not sure i can be bothered with it all.

Still no word from my mum. There (understandingly) being strict about how many people can visit, so it feels like a waiting game.
