That's exactly what I like! How CONSISTENT it is.

You would be surprised how inconsistent it is in many bars and restaurants, something close to gazpacho that it's definitely not salmorejo, disgusting. In the south it's different, they usually know how to make it properly.

There was a really nice little restaurant near my house in Ibiza that did a proper salmorejo on the menu del dia in winter. I miss going out for a 3 course meal for €12
