In Ireland we generally all say Happy Christmas (Frozen & HLT to confirm)

It kind of ruins “...& a Happy New Year” though

'Merry' only when following it up with 'Happy New Year'.
 
Merry of course. You get so few other times to say it.
 
Happy Chanukah sounds good though - the syllables work well together.

It has to be Merry Christmas because there isn't a song called God Rest Ye Happy, Gentlemen.
