I made them twice, once 3 years ago, and they were perfect, and then a few weeks ago in lockdown, it didn't go that well. I'll be back to the original recipe this time. It takes ALL DAY to make them properly, as they have to go in and out of the fridge a few times, but it's worth it. Well not really because you only get like 15 of them, but whatever.

I can cope with that though as it’s just lots of small amounts of time spent on each step. I’m SO SHIT at the actual cutting and rolling bit, I use a ruler and still fuck t up. The size range is always ridiculous.

Try using a piece of cardboard with the right size to cut the dough, it helps a lot.
