The best bit of course is they could have been reasonable and given you a credit voucher, but because they're being stupid cunts they will have to refund you AND I believe there is an additional charge for them associated with a chargeback(@octophone to confirm)

They’re telling me the terms & conditions on their website are out of date, despite being freely available to view and having NO DATE OF EXPIRY anywhere at all on the page.

There aren't any, they say their regular t&c's apply, which is absolutely fine and dandy and I'd accept that, were it not for the entire page of t&c's they have freely available on their website for saver rate bookings and how I'm entitled to a refund if I cancel any reservation for a stay between March and December of this year.Yeah if they're "out of date" where's there's new ones?

In normal times, there's a charge to the bank for raising a chargeback - this charge is returned if it is successful, at the expense of the business against whom it was raised. My understanding is that some of these fees were suspended due to the sheer volumes surrounding Covid. Given that we're had customers report that businesses have been contacting them and offering vouchers to a higher value than the cash claim if they withdraw the c/back, I suspect that some of the fees are very much extant.
From memory when I had a proper merchant account there was also serious repercussions if you have an excessive number of chargebacks
